Oatmeal Cookie - With Apple And Pears

Oatmeal Cookie
Okay, this is not the most diet-friendly recipe, but it only contains 450 calories.
It is really delicious and moderately easy to prepare:

Ingredients:
1 apple
2 pears
80g oatmeal
350ml lemonish water (add one lemon's juice to half a liter of water to make it)
25ml lemonish water

150g melted ghee (or butter)
150g birch sugar
2 eggs
1 tsp baking soda
1 teaspoon ginger powder
200g walnut flour (ground walnut)

For the crunchy crumbs:

30g oatmeal
50g birch sugar
1 tbsp walnut flour
20g melted ghee or butter

Boil the 350ml water and add the oatmeal to it.
Peel and cut the fruits to small cubes and pour the 25ml water onto them.
Stir the soft / melted ghee with the sugar until it becomes foamish and then add the eggs one by one. Stir it well. Mix the walnut flour with the baking soda and pour the ginger in it too. Add this mix to the egg-mix and stir them well.
Check the oatmeal, if they're softened, pour the remaining water off from it (if any left) and add it to the mix.

Put baking paper into a tin and pour the half of the dollop into it; pour off the water from the fruits, and place them on top of it, then cover it with the other half of the dollop.

Mix the ingredients of the crumbs together and pour it on top of the dollop.
Place the cookie into the oven - bake it on 190°C for 35-40 minutes.

  2. I am a huge fan of oatmeal cookies, but I have never had any with fruit added. I definitely should give these a try. Thank you.
