Plum Soup

We have yet another delicious and very healthy recipe to share with you:

Plum Soup

Pour 100ml coconut oil and 2-3tbsp of birch sugar in a non-stick frying pan. Fry it 'til caramelised, then add 500g plums (remove the cores, or buy canned plums, but wash them well.). Add a teaspoon of cinnamon, and water to cover the plums. Cook the fruit for a few minutes, and when the plum is soft, pull the pan aside. Add 100ml of rice milk or soy milk (you can pick soy creamer too), then grab a stick mixer and make the soup creamy. Serve and enjoy. :)
Note: Serve it with a spoon of soy-vanilla ice-cream.
