Pumpkin Cookie Recipe

Pumpkin season opens not only for pumpkin heads! ;)
Let's see a tasty pumpkin cookie recipe that you can fit into your paleo diet (please don't forget that this is the alternative paleo diet, not the strict caveman diet...read more about it, here).

Ingredients:
1 pumpkin (after cleaning and baking it, you'll need about 400 grams of it.
20g ghee
15g birch sugar (or brown sugar)
25g almond flour (or gluten-free flour)
50-100 milliliter rice milk
2 eggs
almond aroma (half a teaspoon)
a teaspoon of ginger and cinnamon mix


The first thing you want to do is to mix the sugar with the ghee and add the aroma in it. Add the baked and soft-pulpy pumpkin and mix it all together. 
The next step is to add the flour, the spices and the eggs. Pour the milk after you mixed the dough and stir it well.
Put a piece of baking paper into a tin, pour the dough in it and bake the cookie on 180°C for about 20 minutes.
Serve and enjoy! :)
